Ingredients:
• 1 1/2 cups mashed overripe
bananas about 4 medium or 3 large
• 3 large eggs
• 3 tbsp melted and cooled coconut oil
• 1/4 cup pure maple syrup or honey
• 1 tsp pure vanilla extract
• 1 tsp baking soda
• 1 tsp baking powder
• 1/2 teaspoon ground cinnamon
• 1/4 teaspoon sea salt
• 2 1/2 cups almond meal
• 1/3 cup LSA
• 1/4 cup chopped walnuts
• 1/4 cup organic dark chocolate chips
(optional)
Method
Preheat oven to 160ᵒC. Grease and line a ‘loaf tin’ or a ‘slice tray’ with baking paper.
In a large bowl, mash bananas, and add eggs, coconut oil, maple syrup (or honey), vanilla extract and mix to combine.
Stir in dry ingredients and add chocolate chips (if using).
Pour into the dish and place in centre tray of the oven for 45-50 minutes or until a skewer comes out
clean.
Serve as is, or with butter, yogurt and berries, peanut butter, or jam.
Store in an airtight container in the fridge for up to 5 days, or freeze for 3 months.Nutrition (per serve, including choc chips):
