Ingredients (4 serves):
• 500g carrots, grated. (Ideally organic)
• ½ red onion, finely sliced
• Zest & juice of 1 lemon
• 2 tsp toasted cumin seeds
• 2cm piece ginger, finely grated
• 1cm piece of turmeric, finely grated (optional)
• 1 small bunch parsley, chopped
• 3-4 tbsp extra virgin olive oil
• Salt & pepper to taste
Method
• Mix all ingredients in a bowl and serve.
• Consume ½ – 1 cup of raw carrot salad a day.
